Born in Queens, New York in 1977. Moved to Florida in 1985. When I was twelve years old my brother-in- law Jim Castello opened his first Italian restaurant and from there it was a goal and passion for me to reach. Learning from old school Italian chefs at a young age inspired my passion and drive to perfect flavors and infuse flavors into dishes. Working in many different places and setting helped me develop skills in all verticals of the kitchen. I feel that there is a big difference between someone who cooks for a job and someone who cooks with love and passion and receives his satisfaction from the positive reaction of the guests who are amazed by the taste and flavor. Timing is everything and if you rush the process, your product will reflect that. Each and every dish on our menu, will reflect the time, passion and love that has been put into it. The main purpose of Roots is to showcase traditional northern Italian dishes with a modern and fresh twist to each dish. My two favorite dishes are Penne a la Vodka and Snapper Oregenato, which will be added to the dinner menu shortly.
Born in Dnepr, Ukraine on April 26 th 1993. Moved with my family to Aventura, FL in 1997. Grew up in Florida, but had the wonderful opportunity to travel the world with my parents at a young age. Always had a passion for providing hospitality and learning about hotels and tourism. After high school, moved to Lucerne, Switzerland where I studied Hotel and Tourism Management. After finishing my Bachelors in Switzerland, I moved back to Florida and starting looking for an opportunity to continue pursuing my passion for providing high-class hospitality. Also worked for a couple of years for a healthy food deliver company where I meet my now best friend and partner Michael Latimore, the best chef I know. After working there for three years we had decided to look for something where we could express our passion, talent, and creativity on a daily basis. Decided to buy Roots and cater delicious Italian favorites to the Boca Raton people, which we are starting to love so much. My favorite dish on the menu is the Shrimp Fra Diavolo.
